Recipe:
Lay steak on a tray. Pat dry with paper towel. Sprinkle extra virgin olive oil on top and bottom. Add a layer of steak rub, light, medium or heavy depending on how peppery you like it. Pat the rub into the meat. Leave sitting at room temperature for 20 to 30 minutes.
You need a hot grill, with the coals close to the grill rack. Sear your steak on both sides, putting grill marks on the steak. While searing, turn steak a quarter turn to put an x on it. Be careful to not burn your seasoning.
Once seared, drop the coals down a notch and finish cooking. Cook to your desired doneness. I go by feel. Using tongs to press on the steak, soft is rare, hard is well done. If you prefer to time your meat, a 1 1/2 inch steak will take about 3 to 4 minutes per side for medium rare, depending on the fat content of the steak. Lean steak will cook faster and fatty steak like rib eye will take a little longer. Never put a hole in the meat while it is cooking or resting, as it will lose a lot of juice.
When you have finished cooking your steak, take it off the grill and put it on a pan or plate. Let it sit for approx. 5 minutes to let the juice redistribute throughout the steak.
