Picking out ribs at the market: An easy way to know if ribs are full of fat is to fold the package at the middle. If it folds over easily, it is fairly lean, as fat is hard when it is cold.
Remove ribs from package. Rinse under cold water to remove film from ribs. Pat dry with paper towel. Cut off excess fat. Put extra virgin olive oil on both sides of ribs. Put rub all over ribs and pat in. Let ribs sit at room temperature for 20 to 30 minutes.
You will need a hot grill, with the coals close to the grill rack. Put charcoal on only one side of the pit. Sear ribs on both sides, leaving nice grill marks. Be careful to not burn your spices. After searing, move ribs off the coals and use indirect heat.
Cooking tender and juicy ribs takes time. It will take about 3 to 4 hours, basting the ribs every 30 minutes. Basting mixture – One cup of extra virgin olive oil and 4 heaping tablespoons of pork rub.
After ribs are done, let them rest for 5 to 10 minutes. This allows the juices to redistribute throughout the meat.
